This mouthwatering high protein brekky only take about 5 mins to throw together the night before and you can just grab and go in the morning. I prep a few days of these in advance, just store in a mason jar in the fridge and they will last fresh up to 3 days.
Berry Cheesecake Overnight Oats
Ingredients
25g almonds
1/2 cup blueberries
1/2 tsp vanilla extract
1/2 cup rolled or quick oats
1 cup low fat cottage cheese
1/2 cup unsweetened almond milk
stevia to taste
Directions
In a bowl or jar, combine berries, and vanilla and mash with a fork. Add oats, cottage cheese, stevia and almond milk, stir to combine.
Refrigerate for at least 6 hours (preferably overnight), and top with chopped almonds.
