Protein Pancakes
Ingredients
1 tsp salt
1/2 cup low fat cottage cheese
1 tsp vanilla extract
stevia to taste
1 1/4 cup mixed berries
1/2 cup rolled or quick oats
1/2 tsp ground cinnamon
2 whole eggs
Directions
Blend oats, eggs, cottage cheese, cinnamon, salt, vanilla, and (optional) sweetener in a blender.
Spray a pan over medium heat with nonstick spray.
Pour 1/4 cup of batter into pan and cook for about 2 minutes, or until lightly brown - flip and cook the other side.
Top with any topping you like, berries, melted nut butter, toasted coconut, etc.
