So light and fluffy, you'd never know they were healthy!

Gone are the days of dry and bland protein pancakes, this recipe is so light and fluffy, the secret of course is cottage cheese!


Protein Pancakes


Ingredients

  • 1 tsp salt

  • 1/2 cup low fat cottage cheese

  • 1 tsp vanilla extract

  • stevia to taste

  • 1 1/4 cup mixed berries

  • 1/2 cup rolled or quick oats

  • 1/2 tsp ground cinnamon

  • 2 whole eggs

Directions

  1. Blend oats, eggs, cottage cheese, cinnamon, salt, vanilla, and (optional) sweetener in a blender.

  2. Spray a pan over medium heat with nonstick spray.

  3. Pour 1/4 cup of batter into pan and cook for about 2 minutes, or until lightly brown - flip and cook the other side.

  4. Top with any topping you like, berries, melted nut butter, toasted coconut, etc.
